Cam has worked in the meat industry since 1993 for Mathias Meats, Horizon Meats and National Meats, which he formed in 2003. National supplied sous-vide cooked Lamb Shanks to Aldi and Costco supermarkets in the UK, where Cam and his family lived for 11 years. Valuable experience was gained regarding raw material supply and export trade cycles
before the business was sold to a joint venture partner in 2012. Cam launched Merit Meats in 2013 and began developing an innovative retort cooked Pork Ribs product the following year. Merit Meats formed Hershell’s Foods in 2016 with a partner to commercialize the Ribs, which are now successfully contract manufactured in Spain. Merit Meats was a founding shareholder in Wild Venison pack-house and exporter Southern Alps Meats, that processed one-third of all NZ Wild Red Deer 2017-19. Cam gained a thorough understanding of industry costs, supply and the limitations of commodity marketing. Merit sold its stake in Southern Alps Meats to focus on value-added opportunities with NZ Wild Red Deer. A return on investment (ROI) of 400% was achieved within 2.5 years
